Aish el saray is a traditional Lebanese dessert which is incredibly delicious and super soft. This layered dessert has the goodness of milk, cream and pistachios. The rose water gives it a refreshing fragrance as well. Aish el saraya is served chilled and could be the perfect ending for your elaborate Eid feast. Ingredients
For the base
6 slices bread
¾ cup sugar
¾ cup water
For the first layer
2 cups milk
5 tbsp sugar
150 gms cream (fresh or whipped cream)
4 tbsp corn flour
2 tbsp rose water
Preparation
Toast the bread slices on a tawa. Crumble the toasted bread slices in a mixer.
Caramelize ¾ cup sugar and loosen it by adding ¾ cup water.
Into it add the crumbled bread and mix well.
Spread this toasted bread-simple syrup mixture inside the dish in which the dessert is prepared. This is the base layer of the dessert.
Mix the milk, sugar and cream well. Put it on the stove to boil.
Mix corn flour in ¼ cup milk and add it into the milk-cream mixture when it begins to boil.
Stir well until the mixture has thickened up.
Into it add the rose water and mix.
Simmer it for at least 2-3 minutes.
Pour this milk-cream-rose water mix over the bread base which has already been set inside the dessert dish.
After the layers have cooled down, garnish generously with chopped pistachios.
Pop it in the fridge for at least four hours for the dessert to set.
